Banana Crumb Muffins

I just pulled them out of the oven. The house smells so good. I used the 'adjust recipe' option here because I had two cupcake sheets that held a total of 24 muffins and I wanted to fill them all up. Plus there are 12 of us and I know everyone would want more than 1 if they came out good. So good thing I doubled it. I did use 9 bananas because that's how many I had to use up or they were going in the freezer. I also used half melted butter and half canola oil. I put both pans into a 350 degree oven set it for 35 minutes because I thought they were going to be dense and would need the extra time. Good thing I checked after 18 mins because they were perfectly done. The only problem is that I was going to add my crumb topping to them like some suggested 5 mins before they were done. Well here is where I had another brain fart, because instead of the 2tbls.+1 1/4 tsp of butter for the crumb topping I used a whole stick couldn't for the life of me figure out why it didn't look crumbly lol... ANYWAY I smushed it o
These muffins are so moist and tasty! I always have a hard time with muffins sticking to the pan or the muffin cups. These slide out perfectly. I decided to add the crumb topping about 5 minutes before taking them out of the oven. This prevents the crumb topping from melting into the muffin.
These are amazing! The changes I made was I added 1tsp vanilla to the mashed bananas, I added some cinnamon and nutmeg to the dry ingredients, I doubled the crumb topping, adding a little extra flour to make it extra crispy. I made a double batch and got 23 muffins. I seriously cannot wait for my family to walk in the door...they are going to flip out! I'm throwing out all of my old banana muffin recipes, this is the best ever!
Great muffins! After reading the reviews I did make some slight changes before making. I used 1/2 tsp baking soda and 1 1/2 stp baking powder. I used about 1 1/3 cup mashed bananas, 1/2 tsp vanilla and 1/2 tsp banana flavoring. Next time I will add some chopped walnuts to the batter too. The topping did get soggy the next day and my son thought it was too sweet. I'll try another topping next time but, this is a keeper!
